The Carrousel du Louvre has held the seventh edition of “Le Grand Tasting”: the festival of the best wines. During a whole day we enjoyed the best wines, cognacs and champagnes of the world, including master classes and gourmet workshops. In total, 350 producers, all selected and approved by Bettane and Desseauve. A Chateau Lafite-Rothschild, a Cheval Blanc, a Marqués de Cáceres, a Dom Perignon or a Remy Martin … is important not to drink, just taste them to avoid end up seeing double … =)
Today I will share with you some easy steps, so you can make a wine tasting like real professionals:
– First of all, look at the wine. Through eye contact try to predict what kind of grapes were used. Look at the palette of colors, its brightness and texture.
– Shake the cup, and let the wine sit. Look at some kind of “tears” that fall from the top of the glass, from the limit where the wine came. Depending on the speed of these “tears” we can deduce the alcohol concentration of the wine.
– Next step: the smell. First, smell the wine with the glass still, to receive first impression and identify any possible defects. For the second perception, rhythmically move the cup from the base, and approach the nose, eyes closed, to sharpen our sense of smell. You will feel the sensations multiply!
– And finally we will taste the wine. However, attention! The first sip does not count. This will numb our tongue and throat. Once our palate is accustomed to alcohol, we proceed to a second try, and now is the correct tasting. Take a sip of wine, while introducing air (very important for oxidation) in your mouth. Yes, you will produce a sound like when you finish a smoothie (don’t you worry, this will make you look like a pro 🙂 and move the wine across your mouth, so that all your taste buds emit sensations. Move your tongue up and down three times, and try to identify the different components: fruit, honey, wood, thyme…
A good wine will never leave your mouth dry, instead, you will look forward to continue drinking. If you are in a professional tasting like the Grand Tasting, where you are going to taste different types of wine, it is very important not to drink it. So once all the sensations were perceived, we will spit the wine into a “spittoon”. And in order not to confuse our palate between wine and wine, just take some bread or cheese.

Durante una jornada hemos disfrutado de los mejores vinos, coñacs y champanes del mundo, de clases magistrales sobre degustación y talleres gourmet. En total, 350 productores, todos ellos seleccionados y aprobados por Bettane y Desseauve. Un Chateau Lafite-Rothschild, un Cheval Blanc, un Marqués de Cáceres, un Dom Pérignon o un Remy Martin… es importante no beber, y sólo degustar, para no terminar viendo doble… =)
Os dejo unos pequeños pasos para hacer una cata de vinos como auténticos profesionales:
– En primer lugar observamos el vino. Mediante contacto visual intentamos predecir qué tipo de uvas han sido empleadas. Fíjate en su paleta de colores, en su brillo y su textura. Agita la copa, y deja que repose el vino. Fíjate en una especie de lágrimas que caerán desde la parte más alta donde llegó el vino. Según la velocidad de estas “lagrimas” podemos deducir la concentración alcohólica del vino.
– Pasamos a la parte olfativa. En primer lugar, olemos el vino con la copa parada, para detectar si tiene algún defecto mayor, y recibir una primera impresión. Para la segunda percepción, movemos la copa rítmicamente desde la base, y acercamos la nariz, cerrando los ojos, para agudizar nuestro sentido olfativo. Sentirás que las sensaciones se multiplican!
– Y por fin vamos a probar el vino. Sin embargo, ¡atención! El primer sorbito no cuenta. Éste nos va a adormecer un poco la lengua y la garganta. Una vez que nuestro paladar está habituado al alcohol, procedemos a una segunda, y ahora sí correcta, degustación. Toma un pequeño sorbo de vino, introduciendo al mismo tiempo aire (muy importante para la oxidación) en tu boca. Sí, vas a producir un ruido, como cuando terminas un batido (tranquilos, esto os hará ver como profesionales 🙂 y mueve el vino por toda tu boca, para que todas tus papilas gustativas emitan sensaciones. Mueve la lengua de arriba abajo, unas tres veces, e intenta identificar los diferentes componentes: fruta, miel, madera, tomillo…
Un buen vino nunca os va a dejar la boca seca, al contrario, vais a tener ganas de seguir bebiendo. Si estáis en una cata profesional, como el Grand Tasting, donde vais a degustar diferentes tipos de vinos, es muy importante no beberlo. Así que una vez percibidas todas las sensaciones, vamos a escupir el vino en una “escupidera”. Para no confundir a nuestro paladar, entre vino y vino tomaremos un poco de pan o queso.
